The Art of Roman-Style Pizza in the Heart of Chicago
Located at 161 N Sangamon St in the vibrant West Loop neighborhood of Chicago, Bonci Pizzeria brings a unique culinary tradition to the American Midwest. Founded by the renowned pizzaiolo Gabriele Bonci, this establishment has redefined how many locals perceive pizza by introducing the authentic Roman style known as pizza al taglio. Unlike the deep-dish tradition that Chicago is globally famous for, Bonci focuses on a lighter, rectangular crust that is baked in large trays and sold by weight. This approach allows diners to experience a variety of flavors in a single visit, making it a destination for those who appreciate the intersection of high-quality ingredients and artisanal baking techniques.
The atmosphere at the Chicago location reflects the fast-paced yet appreciative culture of Italian street food. Upon entering, guests are greeted by a display case filled with an ever-changing array of toppings, ranging from classic combinations to experimental seasonal creations. The philosophy here is rooted in the quality of the dough, which undergoes a long fermentation process to ensure a light, airy, and digestible base that provides the perfect canvas for fresh, locally sourced, and imported Italian toppings. It is a space where culinary craftsmanship meets the casual convenience of a neighborhood eatery.
What Makes Bonci Pizzeria Distinctive
The Roman Al Taglio Tradition: The hallmark of the experience is the pizza al taglio method, where pizzas are baked in rectangular pans. This allows for a distinct texture—crispy on the bottom and airy throughout—that is cut with scissors and priced by weight, giving customers the flexibility to try multiple slices without committing to a single large pie.
Commitment to Dough Excellence: At the core of every slice is a signature dough recipe that emphasizes long fermentation. This scientific approach to baking results in a crust that is not only flavorful but also significantly easier to digest than traditional heavy-crust pizzas, setting a high standard for quality in the local food scene.
Seasonal and Creative Topping Profiles: The menu is dynamic and evolves based on the availability of ingredients. By focusing on seasonal produce, artisanal cheeses, and high-quality cured meats, the kitchen ensures that every visit offers something new, encouraging a sense of culinary exploration for regular patrons and first-time visitors alike.
A Cultural Bridge in the West Loop: By establishing a presence in the West Loop, Bonci serves as a bridge between Roman street food culture and Chicago’s sophisticated dining landscape. It provides an accessible yet elevated experience that honors the heritage of Italian baking while fitting seamlessly into the energetic urban fabric of the city.
A Destination for Pizza Enthusiasts
Whether you are a long-time resident of Chicago or a visitor exploring the culinary offerings of the West Loop, Bonci Pizzeria offers an experience that is both grounded in tradition and refreshingly modern. The focus on transparency, from the visible preparation process to the selection of premium ingredients, creates a connection between the baker and the diner. By prioritizing the integrity of the dough and the creativity of the toppings, the establishment continues to be a notable contributor to the diverse gastronomic identity of the area. It remains a place where the simple act of grabbing a slice is transformed into an appreciation of artisanal skill and authentic Italian flavor profiles.

Decent food, good service. They have plenty of seating, and it’s a good spot for groups or solo dining. There’s plenty of indoor and outdoor seating. One highlight of this restaurant is the large variety in pizza flavors. More

I know that many people might come to Chicago for deep dish pizzas. However, you shouldn't pass this place by. The super thin pizza here is delicious in its own way. Crispy, light, and packed with toppings flavor. They sold pizza by weight … More

What a wonderful idea! You can buy pizza by the inch. That means you can choose as many of the delicious flavours as you'd like. The pizzas are ready-made. They seem to rotate toppings, so not everything you read about here will be available. I had three slices: pepperoni, cheese & potato, and hot honey and all of them were delicious.
I had the cheese ball thing as well, which I thought would be like a mozzarella stick. Instead, it tastes much like a deep-fried ball of spaghetti, though it is made of different cheeses and tomato sauce.

The pizzas are pretty decent. Flavor feels hearthy and premium sort of like an artisan pizza. The price is not bad at all, about $5-6 for what you would expect a "slice" to be. … More

Cool pizza place with option to order by the size of slice you want. Like one? Order a big slice. Want to try a bunch? Order lots of little slices. The pizzas were outstanding and selection was good when we visited.
Negatives - space feels halfway finished, between palace to sit and enjoy and get me outta here. With some decluttering on the kitchen side and just a bit more effort in the sitting side, this place would be almost perfect.

The service was very friendly! The pizza slices looked like they’d been out for a while, but they reheated beautifully and tasted great. I tried Bonci in Roam a year ago, and this was almost just as good! My favorite was the sausage and blueberry slice—an unusual combo that works surprisingly well together.”

Loved this pizza by the slice! Unique crust, flavors and concept. They charge by the ounce and cut the amount of pizza you want with scissors ✂️. I always appreciate being in Chicago where they cut your pizza into squares 🟥. Go with people who like to share so you can try multiple pizzas 🍕. The pesto potato was my personal favorite, loved their classics as well as the unique twists! Bravo Bonci 👏🏽

This Pizza was definitely worth a try…..and I think I will most certainly return! No matter if you're on a date or with friends, this place is a great fit. However, it is definitely not Chicago deep dish pizza. This pizza has a delicious crust and is similar to focaccia. This is Roman style pizza. There are 15+ toppings you can choose from so make sure to order different ones to get the best experience. 100% recommend!

I visited Bonci Pizzeria in Chicago for lunch during my brief trip to the city, and it was an excellent choice. I was craving authentic Italian pizza, and this place came up as one of the most recommended spots, so I decided to give it a try. The experience certainly lived up to the reputation.
I ordered the Mozzarella Zucchini Lemon pizza and their veggie pizza, paired with a soda, and enjoyed every single bite. The pizzas had such fresh, vibrant flavors, with a light and airy crust that was delicious on its own. The zucchini and lemon combination was refreshing and unique, while the veggie pizza was hearty and full of flavor.
The casual and welcoming vibe of the place made it perfect for a relaxed lunch, and I appreciated how the pizzas are served in Roman-style squares, letting you try different varieties in one meal. It felt authentic yet approachable, and you could clearly see the attention to quality in every slice.
If you are in Chicago and looking for something beyond the usual deep-dish experience, Bonci is absolutely worth a visit. I left satisfied and would happily go back again.

A must visit pizza place in Chicagoland. Probably the most crispiest pizza crust I ever had, which they somehow manage to cut with scissors with so much ease. They offer so many pizza varieties you never knew you wanted.
They offer pizza slices based on weight with tavern cut, so I would suggest to order as many varieties as you can, with minimal sizes, so you get to explore all the delicious options they have.
