Located at 1191 E Calaveras Blvd in Milpitas, California, Gram Cafe Pancakes has established itself as a notable destination for those seeking a unique culinary experience centered around the art of the souffle pancake. The establishment brings a specific style of Japanese confectionery to the local community, focusing on a preparation method that prioritizes texture, aeration, and a delicate balance of flavors. For residents and visitors in the Silicon Valley area, this location serves as a dedicated space where the traditional concept of a pancake is reimagined through a lens of precision and patience.
The atmosphere within the cafe is designed to complement the nature of the food being served. Because the signature items require a significant amount of time to prepare properly, the environment encourages a slower pace, allowing guests to step away from the fast-moving nature of the surrounding tech hub. Whether you are visiting for a mid-morning treat or an afternoon indulgence, the focus remains on the craft of the kitchen and the quality of the ingredients used in each batch.
What Sets the Experience Apart
When visiting the Milpitas location, guests often note several distinct characteristics that define the Gram Cafe experience. These elements are central to why the brand has garnered attention in various markets across the globe:
The Souffle Technique: The primary draw is the signature souffle pancake, which is characterized by its significant height and cloud-like consistency. Achieving this texture requires a meticulous folding process and careful temperature control, resulting in a product that feels light and airy rather than dense.
Fresh Preparation: Unlike many breakfast establishments that rely on pre-made batters or high-volume griddling, each order is prepared individually. This commitment to made-to-order service ensures that the pancakes reach the table at their peak structural integrity and temperature.
Balanced Flavor Profiles: The menu is curated to avoid excessive sweetness. By utilizing high-quality dairy and subtle toppings, the cafe ensures that the natural flavor of the pancake remains the focal point, rather than being overwhelmed by heavy syrups or artificial additives.
A Focus on Craftsmanship: The kitchen staff follows specific protocols to ensure consistency across every plate. This dedication to the process reflects a broader philosophy of culinary discipline, where the goal is to provide a reliable and high-quality product every time a guest visits.
A Destination for Culinary Curiosity
Exploring the offerings at 1191 E Calaveras Blvd offers more than just a meal; it provides an opportunity to engage with a specific style of international dessert culture. The cafe serves as a bridge between traditional breakfast staples and the refined techniques found in modern Japanese patisseries. By prioritizing the integrity of the souffle pancake, the team in Milpitas maintains a standard that appeals to both casual diners and those who appreciate the technical side of baking.
As you plan your visit, it is helpful to keep in mind that the nature of these pancakes means they are best enjoyed immediately upon serving. The combination of the warm, soft interior and the carefully selected accompaniments creates a sensory experience that is distinct from standard pancake houses. Whether you are a long-time fan of Japanese-style desserts or simply looking for a new spot to enjoy a quiet moment in Milpitas, Gram Cafe Pancakes provides a consistent and thoughtful environment for your next outing.
Ultimately, the success of this location lies in its simplicity and its refusal to compromise on the time-intensive preparation that its signature dish demands. It stands as a testament to the idea that when food is treated with care and respect for its origins, it becomes a memorable part of the local dining landscape. We invite you to experience the texture and taste that have made this style of pancake a global phenomenon, right here in the heart of the community.

Everything about Gram is just average, except for the prices. It's pretty pricey considering okay food. And the atmosphere is somehow cold and sad even when the house is fullish

The service was prompt and the food was good. Shabu tends to be on the pricey side in general so expect that about the prices. If you're ok with an early dinner, they have a happy hour discount if you order before 6 that definitely helps. … More

We ordered 3 souffles and my favorite was the mango however I think it did not need the grapefruit on it. If I ever go back, I might try the match.

Just saw a sign outside that said it was permanently closed? This makes me so sad. The pancakes were so good and even better than the Hanabusa Cafe ones. Now, the only other location is the one in SF, which can be a drive (especially for traffic hours). More

Delicious food, and pretty good service. It was definitely worth getting the all you can eat, because not only can you order extra meats/veggies, you can also get more broth, and some appetizers are included as well.

Good fluffy pancakes. They really expanded their savory food menu as well which tasted surprisingly good. I really liked their shrimp croquette. It's definitely a good alternative to hanabusa cafe because there's generally no wait and you don't have to book in advance. Their pancakes take some time to make though.
Something to note is that the bathroom here is always really really dirty and when my friend tried to go months apart it seemed like they hadn't cleaned it in those few months? The stall that was out of order then is still out of order now and still smells really bad. So we never end up using the bathroom here.

Great service. And the food was just perfect.
Definitely try the black sesame dalgona. We got here for brunch after a long hike. And everything just hit the spot. The shumai starter, followed by savoury salmon & avacado pancakes. And finally the chocolate hazelnut souffle pancake was the piece de resistance, and well worth the twenty minute wait. We are coming back here for sure.

This was a pretty disappointing experience for the price. I got the wagyu beef curry which basically looked and tasted like a hamburger patty from McDonald's slapped on top of rice and drowned with curry.
The souffle pancake also wasn't much to write home about. Maybe the standard flavor would have been better but there was a weird taste for this one. If it were cheaper I may have given it another try but it's too expensive, service was average, and food was meh. I probably wouldn't go again.

Very nice staffs. General Japanese shabu, beef not bad, strong flavor Sukiyaki soup base, I like it! We also ordered a pancake, it tastes not over sweety with soft and lovely texture. Most girl would like it! :-)

The hazelnut pancakes was alright nothing spectacular, I was expecting a bit more flavor. It's made to order so expect to wait 30-40 minutes. I've also had soufflé pancakes at Tancha and theirs seem to be better. Indoor and outdoor dining available.

Overall the place is good, I enjoyed the food AYCE option served and the attentiveness of the staff. Only con was the location as its near the entrance of a freeway so I got lost by entering the freeway thinking it was an entrance into the plaza to the restaurant, LOL. Parking is decent, we went on Saturday evening to night time. Not too packed and got a table within 5 mins.
Inside the business, the decoration is minimal and the layout is clean. They have a meat slicer that is slices in front of you to indicate the quality of the meat. Meat selection is beef, pork and lamb, all were delicious. Our party also ordered appetitizers such as shumai, seaweed salad, gazoyas, all good. 4 variants on soup base, all were good, too. The AYCE also gives u additional add on of +12 for AYCE drinks. I ate my money's worth of food and 9verall would say I got great service, great food, and a positive experience. I would recommend this business.

Their specialty, just as the name of the place suggests, was f-ing amazing. My number one favorite flavor was the salted cheese which was salty and savory sweet. The texture was airy, creamy, moist, and spongy. The ube was also really good. The takoyaki and the shrimp siu mai was barely palatable as they used the same weird potato-ish filling in both these items. Hopefully they improve on these appetizers. But everything else was bomb dot com.

A bit strange cos it's sharing the same space with shabu. The food is ok. The SF store interior is much nicer. Staff was trying their best but obviously short handed.

My cousin recommended this new pop up restaurant in Milpitas called Gram Cafe and pancakes. It originated from Osaka, Japan and was started in 2014. Now they have over sixty locations worldwide and this is the 2nd location in America. They are known for their premium soufflé pancakes, which are soft, fluffy, and light pancakes that has different filling options. I got a box of mix flavors, original, matcha, oreo and Ube. I thought this were good, but they were too decadent for me. It's a heavy dessert, I would only recommend it after small meal. You would be too full after a heavy meal. I wanted to try the food, so I got the Tonkatsu curry bento box and really liked it. The pork was perfectly crispy and flavorful, the curry was not overwhelming, and the dressing on the salad was yummy. I would recommend it. For my drink, I got the Blueberry fruit ice smoothie. Good amount of flavor and very sweet. Since they only offer one size for all the drinks, I personally thought $7 was too expensive for the drink. I also tried the expresso smoothie, which was $6.50 and I thought it was just meh. You can get a better coffee drink for cheaper and better at the Starbucks in the same parking lot. I went here twice to try everything. My second time I arrived, my friend was sitting at the bench in front. He informed me that he literally has been waiting for an hour and thirty minutes for his food. I was in shock. I felt so bad for him and his family. I called my order in on the phone thinking it was going to be fast, but they told me it's was going to be another twenty for my pancakes. Mine you, I already spent fifteen minutes talking to my friend outside. I recommend calling at least thirty minutes before showing up to get your food. They are a new pop up and still working out all the kinks, but ninety minutes for a meal is insane. I would have left. I mixed emotions about this place so I might need to try it out one more time.
